Chocolate Mashed Potato Truffles

Chocolate Mashed Potato Truffles mix cold, unflavored mashed potatoes with melted semisweet chocolate, vanilla extract, and a pinch of salt. The cooled mixture is shaped into balls and coated with nuts, cocoa, or coconut, producing a dense, fudgy treat with a subtle creamy texture from the potatoes.

Description

These truffles begin with gently melting semisweet chocolate using a double boiler method. The melted chocolate is combined with cooled mashed potatoes, vanilla extract, and salt, forming a dough-like mixture that is chilled until firm. Once cold, the mixture is portioned into tablespoon-sized balls, then rolled in coatings such as chopped pistachios, cocoa powder, or shredded coconut for added texture and contrast. The use of mashed potatoes creates a smooth, creamy interior with a unique subtle flavor that balances the chocolate.

This treat can be stored in an airtight container in the fridge for several days, making it suitable for preparing ahead. The coating offers a pleasant textural difference from the soft center, and options allow for customization based on preference.

Handling the truffles carefully during rolling prevents them from becoming misshapen or squished. The recipe notes suggest storing them in single layers to maintain their shape and appearance.

Ingredients

Servings
  • 2 oz bars semisweet chocolate or 2 cups of chocolate chips
  • 1 cup potatoes cold, mashed, unflavored
  • 1 tsp vanilla extract 5 mL
  • pinch salt
  • ¼ cup Coating chopped pistachios, cocoa powder, or shredded coconut

Instructions

  1. Chocolate: Add chocolate to a glass mixing bowl. Bring a small pot of water to a simmer, then set the bowl of chocolate over the boiling pot (the bottom of the bowl should hover over the water but not touch it). Stir constantly until the chocolate chips have melted, then remove the bowl from above the water.
  2. Mix: In a large bowl, stir together melted chocolate, mashed potatoes, vanilla, and salt. Cover and refrigerate for at least 30 minutes until firm.
  3. Roll: Roll tablespoon-sized portions into balls, then roll in your desired coating.

Notes

  • Store truffles in an airtight container in the refrigerator for up to 3 to 4 days to maintain freshness.
  • Place truffles in a single layer during storage to prevent them from becoming squished.
