Chocolate Melting Cake

Chocolate Melting Cake is a rich, individual molten lava cake made with a blend of baking chocolate, butter, eggs, sugar, and flour. The batter is chilled before baking to produce a firm exterior and a molten, melting center, finished with powdered sugar and optional ice cream.

Description

This Chocolate Melting Cake uses high-quality baking chocolate melted together with butter for a dense, intense chocolate flavor. Egg whites and yolks are whisked with sugar until foamy and light, then combined with the chocolate mixture, vanilla extract, salt, and a small amount of flour to create a smooth batter. After pouring into butter-greased ramekins, the cakes are chilled for 30 minutes to 4 hours, helping the dessert maintain structure while baking.

Baking at 350°F for about 12 to 15 minutes yields cakes with firm tops and sides but a soft, melting center that flows when cut into. Dusting with powdered sugar adds a touch of sweetness and contrast. These cakes are commonly served warm, often accompanied by a scoop of ice cream to complement the rich chocolate.

The chilling step aids in achieving the desired molten texture, allowing the cakes to bake evenly with a tender crumb exterior and gooey interior.
