Chocolate Mint Brownies

Chocolate Mint Brownies feature a rich, fudgy chocolate base layered with a creamy mint filling tinted green, and topped with a smooth chocolate glaze. The dessert combines bittersweet chocolate and cocoa for depth, while the mint layer provides a fresh contrast. Cooling between layers ensures clean slices.

Description

The Chocolate Mint Brownies begin with a chocolate brownie base made by melting bittersweet chocolate and butter, mixed with sugar, eggs, and vanilla. Flour, cocoa powder, and salt create a dense yet moist texture, baked until it yields moist crumbs on a toothpick.

The mint layer is a fluffy buttercream tinted green with food coloring, flavored with mint extract, and sweetened with powdered sugar and milk. It is spread evenly over the cooled brownie base. The final topping is a melted mixture of chocolate chips and vegetable oil, poured over the mint layer and cooled until set.

The layers combine to produce a dessert with a moist, slightly dense chocolate base, a sweet creamy mint middle, and a firm chocolate topping. Cooling between layers prevents melting and ensures neat layering. Chilling the finished brownies before cutting yields cleaner slices that hold their shape.

Ingredients

Servings

Brownies

  • 5 ounces bittersweet chocolate cut into pieces
  • ½ cup butter
  • 1 cup granulated sugar
  • 2 egg
  • ½ teaspoon vanilla extract
  • ½ cup all-purpose flour
  • 2 tablespoons cocoa powder unsweetened
  • ¼ teaspoon salt

Mint Layer

  • ½ cup butter softened, unsalted
  • 1 teaspoon mint extract
  • 3 cups powdered sugar
  • 3 tablespoons milk or as needed
  • green food coloring

Top Layer

  • 1 cup chocolate chips
  • 2 teaspoons vegetable oil

Instructions

Brownies

  1. Preheat oven to 350°F. Lightly grease a 8x8 pan.
  2. Place chocolate and butter in a bowl and microwave & stir in 30 second increments until melted and smooth.
  3. Mix in the sugar, eggs, and vanilla extract. Add the flour, cocoa powder, and salt and mix until fully combined.
  4. Pour into the prepared pan and bake for 30-33 minutes or until a toothpick comes out with moist crumbs. Cool completely.

Mint Layer

  1. Beat butter and mint extract until fluffy.
  2. Add powdered sugar a bit at a time mixing until well combined. Add milk 1 tablespoon at a time until smooth and spreadable. Add green food coloring and mix until fluffy and combined.
  3. Spread over cooled brownie base.

Topping

  1. Microwave chocolate chips and oil on medium heat until just melted. Spread over mint layer.
  2. Cool completely and cut into squares.

Notes

  • Chop the bittersweet chocolate into small pieces for faster, even melting in the microwave.
  • Line the baking pan with foil or parchment for easy removal and cutting of the brownies.
  • Avoid overcooking the brownies to retain moistness; a toothpick should come out with moist crumbs.
  • Allow each layer to cool completely before adding the next to prevent melting or mixing.
  • Chill the finished brownies for 30 minutes before cutting to achieve cleaner slices.
