Description
The base layer is formed by mixing graham cracker crumbs, coconut flakes, chopped walnuts or pecans, melted butter, sugar, cocoa powder, and an egg. This mixture is pressed into a pan and baked at 350°F for 11 minutes, then cooled completely to set the structure.
The mint layer is created by beating powdered sugar, unsalted butter, milk, custard powder, and mint extract together until smooth and spreading it over the cooled base. The mint extract gives a classic cooling flavor while the custard powder adds body. Green food coloring is added for a visual mint effect. This layer chills in the refrigerator until firm.
The final chocolate top layer is made by melting chocolate chips with vegetable oil and spreading it over the mint layer. Once cooled completely, the bars are cut into squares. The result is a dessert with a firm, crumbly base, silky mint filling, and a glossy chocolate topping. Cooling each layer fully before adding the next prevents melting and blending, keeping distinct textures.
Ingredients
Bottom Layer
- 2 cups graham cracker crumbs
- 1 cup coconut flakes
- 1 cup walnuts or pecans, chopped
- ⅔ cup butter melted, unsalted
- ½ cup granulated sugar
- ¼ cup cocoa powder plus 2 tablespoons, unsweetened
- 1 egg
Mint Layer
- 3 cups powdered sugar
- ½ cup butter unsalted
- 3 tablespoons milk
- 3 tablespoons custard powder
- 1 teaspoon mint extract
- green food coloring
Top Layer
- ¾ cup chocolate chips
- 2 teaspoons vegetable oil
Instructions
- Preheat oven to 350°F. Line a 9×9 pan with parchment paper.
- In a medium bowl mix all of the ingredients for the bottom layer until well combined. Press into prepared pan and bake 11 minutes. Cool completely.
- Beat all ingredients for the mint layer on medium until completely combined. Spread over the cooled base. Refrigerate until set.
- Microwave chocolate chips and oil on medium heat until just melted. Spread over mint layer. Cool completely and cut into squares.
Notes
- Ensure each layer is completely cooled before adding the next to prevent melting and keep clean layers.
