Chocolate Mochi Muffins

These chewy and soft chocolate mochi muffins are easy to make. Great to serve as a light dessert, for morning teas, or even parties.

Ingredients

  • 2 cups glutinous rice flour sweet rice flour or mochiko flour, 250 grams, 8.82 ounces
  • ¼ cup light brown sugar 40 grams, 1.40 ounces
  • ¼ cup granulated sugar 50 grams, 1.76 ounces
  • 2 teaspoons baking powder
  • 3 tablespoons unsweetened cocoa powder 30 grams, 1.06 ounces
  • ½ cup chocolate chips 95 grams, 3.35 ounces
  • ¼ teaspoon salt
  • 1 ½ cup coconut milk 375 ml/grams, 13.22 ounces
  • 2 egg
  • 4 tablespoons butter melted, 58 grams, 1.57 ounces
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 180°C (350°F) and grease and line a muffin pan with muffin cases (see note 1).
  2. In a medium mixing bowl, add the flour, brown sugar, granulated sugar, baking powder, cocoa powder, chocolate chips, and salt. Mix until well combined and set aside.
  3. In a separate large mixing bowl combine the coconut milk, eggs, melted butter, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients, mix until just combined and there are no lumps.
  5. Evenly spread the mixture in prepared muffin pans. Bake in preheated oven for about 20 to 25 minutes or until golden brown. (See note 2.) Remove from oven and allow to cool before serving.

Notes

  •  I used a 12 hole muffin tin with each hole being able to hold about ½ cup of mixture.
  • To check if your muffins are cooked, you can carefully stick a wooden skewer or toothpick in the middle of a muffin. If it comes out clean then the muffins are cooked.
