  • 3 Tbsp all-purpose flour
  • 2 Tbsp granulated sugar
  • 1 Tbsp cocoa powder unsweetened
  • ¼ teaspoon baking powder
  • dash salt
  • 3 tablespoons milk (any kind of milk)
  • 1 tablespoons canola oil (or melted butter)
  • 1/8 teaspoon vanilla extract
  • 1 tsp chocolate chips , or your favorite flavor baking chips

Instructions

  1. Spray the bottom of a microwave-safe mug or coffee cup  lightly with cooking spray.Add flour, sugar, cocoa powder, baking powder, and salt and stir together.
  2. Add milk, canola oil, and vanilla extract and stir until smooth, being sure to scrape the bottom of the mug. Stir in chocolate chips or sprinkle them on top.
  3. Cook in microwave for 70-90 seconds (see note) until cake is just set, but still barely shiny on top. (see notes below). Allow to rest in microwave for 1 minute before consuming.

Notes

  • Start with 70 seconds of cooking time and add more in 15-second increments until the cake is set but still moist; microwave power varies greatly.
  • Let the cake rest in the microwave for 1 minute after cooking to allow it to finish setting.
  • Variations include adding nuts, coconut, cinnamon, flavored chocolate chips, or a small spoonful of Nutella or peanut butter for different tastes.
  • For a dairy-free version, substitute plant-based milk, dairy-free butter or coconut oil, and dairy-free chocolate chips.
  • Reduce sugar by half or use alternatives like honey or artificial sweeteners for a less sweet cake.
  • Use white whole wheat flour instead of all-purpose flour for a slightly different texture and nutritional profile.
