  • 1/2 cup oat flour
  • 3 medium banana 1 1/2 cups mashed well, extra-ripe, mashed
  • 1/2 cup cocoa powder
  • 2 large egg
  • 1 teaspoon baking powder
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 3/4 cup semisweet chocolate chips divided (Such as Lily’s) or chocolate chips of choice, sugar-free

Instructions

  1. Preheat the oven to 350F and grease a 9×4 loaf pan. You can place a piece of parchment paper about 9 x 9 inches inside the pan so it’s easy to remove.
  2. In a medium bowl, mix the dry ingredients;  oat flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a large bowl, mash the bananas until well blended and liquidy, then add the eggs, maple syrup, and vanilla.
  4. Add the dry ingredients to the wet and stir until combined. Stir in 1/2 cup chocolate chips.
  5. Pour into the prepared loaf pan, top with the remaining chocolate chips and bake for 45 to 55 minutes or until toothpick inserted comes out clean.
  6. Remove from the loaf pan and let it cool 15 minutes before cutting.
