Chocolate Peanut Butter Balls with Rice Krispies

Report
Chocolate Peanut Butter Balls with Rice Krispies combine creamy peanut butter, softened butter, and powdered sugar mixed with crushed Rice Krispies to form bite-sized balls. After chilling, they are dipped in melted semi-sweet chocolate for a crunchy, sweet-coated treat ready to chill again until firm.

Description

The recipe blends peanut butter and softened butter with vanilla extract and powdered sugar, creating a smooth, rich base. Crushed Rice Krispies are gently folded in to add light crispness and texture. The mixture is shaped into small balls and chilled to help them set.

Once firm, the balls are dipped into melted semi-sweet chocolate mixed with shortening to facilitate melting and coating. After coating, they are refrigerated again to harden the chocolate shell, resulting in a sweet, crunchy exterior with a creamy, slightly crispy interior.

This no-bake snack is convenient for serving at gatherings or as a homemade candy. The combination of peanut butter richness and chocolate coating makes for a classic flavor pairing, enhanced by the crispy cereal bits.

The process requires chilling between steps to maintain ball shape and to set the chocolate coating properly.

Ingredients

Servings
  • 1 cup peanut butter creamy
  • 1/4 cup butter softened
  • 1 tsp vanilla extract
  • 1 cup powdered sugar
  • 2 cups Rice Krispies cereal crushed
  • 12 oz chocolate chips semi-sweet
  • 2 Tbsp shortening

Instructions

  1. Line a baking sheet with waxed paper and set aside.
  2. Cream together the peanut butter, butter, vanilla extract and powdered sugar together in a large bowl.
  3. Then stir in the crushed Rice Krispies Cereal.
  4. Then shape the mixture into small balls (bite size). Place the peanut butter balls on the prepared cookie sheet with waxed paper and chill in the refrigerator for at least 30 minutes.
  5. Place the chocolate chips and shortening in a microwave safe bowl.  Heat in 30 second intervals, stir between each interval until the chocolate is fully melted.
  6. Dip each of the chilled peanut butter balls into the melted chocolate. Lift the ball out of the chocolate with a fork and then transfer them back to the baking sheet.
  7. Once all of your peanut butter balls are coated, put the cookie sheet in the fridge for 15-30 minutes. This will ensure the chocolate coating is completely hardened.

Notes

  • Refrigerate prepared peanut butter balls for up to 2 to 3 weeks to preserve freshness.
  • For longer storage, freeze the coated balls for 2 to 3 months.
  • Use creamy peanut butter for a smooth texture in the peanut butter ball mixture.
  • Ensure butter is softened for easy mixing but not melted before combining.
