  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 egg large
  • ¾ cup granulated sugar
  • ½ cup avocado oil
  • ¼ cup peanut butter warmed, creamy
  • 1 teaspoon vanilla extract
  • 1 ½ cup banana about 3 large bananas, mashed ripe

Instructions

  1. Preheat the oven to 350°F. Line a large loaf pan with parchment paper. Set aside.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, whisk together the eggs, sugar, oil, peanut butter and vanilla extract until well blended, about 1-2 minutes. Stir in the mashed bananas until well blended.
  4. Fold dry ingredients into the wet ingredients with a rubber spatula until no streaks of flour remain.
  5. Scrape the batter into the prepared pan and bake for 50 to 55 minutes, or until a cake tester inserted in the center of the loaf comes out clean.
  6. Let cool for at least 20 minutes, then remove from pan and cool completely on a wire rack before slicing and serving.
