Description

Starting with frozen and ripe bananas blended with coconut cream, creamy peanut butter, vanilla extract, and pure maple syrup, this popsicle mixture is smooth and naturally sweet with a pronounced banana flavor. After blending thoroughly, the mixture is poured into molds and frozen for at least five hours to firm up.

To finish, the popsicles are briefly loosened from the mold by running warm water around them, then refrozen before being drizzled with a melted chocolate coating made from vegan chocolate chips combined with coconut oil.   • 1 banana frozen
  • 1 banana ripe
  • ½ can coconut cream well stirred
  • 2 tablespoon peanut butter creamy
  • 1 teaspoon vanilla
  • 2 tablespoon pure maple syrup or honey
  • ¼ cup peanut chopped
  • ½ cup chocolate chips vegan, brand Enjoy Life
  • 1 tablespoon coconut oil

Instructions

  1. Add frozen banana through maple syrup to a high powered blender and mix well. 
  2. Pour into popsicle molds and freeze at least 5 hours.
  3. Run mold under warm water and remove popsicles.  Stick them back in freezer.
  4. Prepare chocolate drizzle.  Melt the chocolate chips and coconut oil in the microwave. Stir well.
  5. Drizzle on popsicles and sprinkle with peanuts.  
  6. Serve immediately or put back in the freezer.
