Chocolate Peanut Butter Brownie Skillet

This Chocolate Peanut Butter Brownie Skillet combines rich cocoa and melted butter with swirls of creamy peanut butter for a gooey, fudgy treat. It is baked in a skillet to achieve a soft center and a slightly set edge, offering a contrast in texture. The addition of instant espresso powder subtly enhances the chocolate depth without overpowering it. Best enjoyed warm with a scoop of vanilla ice cream, this dessert suits casual sharing and indulgent moments alike.

Description

The Chocolate Peanut Butter Brownie Skillet features a blend of dark cocoa, butter, and sugars whisked together and combined with eggs and vanilla for the batter. Flour, espresso powder, and salt are folded in alongside chocolate chips to create a rich chocolate base. Dollops of creamy peanut butter are swirled throughout before baking, providing pockets of nutty flavor and creamy texture. Baked until just set, the brownie maintains a moist, tender middle with slightly firmer edges from being cooked in a deep oven-safe skillet. Cooling slightly before serving retains the fudginess and allows easy slicing.

Serving it with vanilla ice cream adds a cooling balance to the dense chocolate and peanut richness. The combination of flavors and the skillet presentation make it a practical dessert for sharing and casual entertaining, where guests can enjoy combined warm and cold elements.

Ingredients

Servings
  • 1 cup butter unsalted
  • 1 cup sugar
  • 1 cup dark brown sugar
  • 3 egg lightly beaten, large
  • 1 tablespoons vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup cocoa powder unsweetened
  • 1 tablespoon instant espresso powder
  • 1 teaspoon salt
  • 1 cup chocolate chips plus more for topping
  • ¾ cup peanut butter creamy
  • vanilla ice cream for serving

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Heat a 10 to 11-inch oven-safe deep saute pan/skillet over medium heat. Add the butter. Once melted, turn off the heat and whisk in the sugars until dissolved. Whisk in the eggs, making sure to quickly combine them so they don’t cook. Whisk in the vanilla extract.
  3. In a bowl, stir together the flour, cocoa, espresso powder and salt. Add it to the skillet and stir until combined and on lumps remain. Stir in the chocolate chips. Dollop the peanut butter all over the batter then swirl it in with a knife.
  4. Bake the brownie skillet for 25 to 30 minutes, or until it is just barely set. You don’t want to overcook it! When it comes out of the oven, you can sprinkle with chocolate chips if you wish.
  5. Let cool slightly then serve topped with vanilla ice cream.
