Chocolate Peanut Butter Cookies

These cookies are so thick and chewy and they're everyone's favorite flavor combo - chocolate and peanut butter!

Ingredients

  • 8 tablespoons butter melted
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 teaspoons vanilla
  • 1 large egg
  • 1 1/2 cups flour
  • 1/3 cup cocoa powder
  • 1 teaspoon espresso powder optional but recommended
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup peanut butter chips
  • 1/4 cup milk chocolate chips

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat together the butter and sugars until well combined.
  3. Beat in the egg and vanilla until just combined.
  4. Add the flour, cocoa powder, espresso powder, baking soda, and salt and beat until a soft dough forms.
  5. Stir in the peanut butter and chocolate chips.
  6. Use a large cookie scoop to scoop out 12 balls of cookie dough.
  7. Place dough on ungreased cookie sheet and bake for 11 minutes exactly. Cookies will look slightly underdone, but will firm up as they cool.
  8. Cool for 5 minutes on the pan before removing to a cooling rack.

Notes

  • For smaller cookies, use a medium cookie scoop and bake for 9 minutes.
