Description
The recipe blends granulated sugar, peanut butter, cocoa powder, and a single large egg to form a dough with rich chocolate and nutty flavors without additional flour. Rolling the dough into one-inch balls and then in extra sugar creates a sweet, slightly crunchy exterior.
Pressing the cookie balls with a fork forms the recognizable crisscross pattern and flattens them to a uniform thickness for even cooking. Baking at 350°F for 12 minutes allows the cookies to set around the edges while remaining tender inside.
Cooling cookies on the baking sheet before transferring to a wire rack helps them firm up properly. These cookies keep well at room temperature in an airtight container for up to one week, especially if stored alongside a slice of bread to maintain softness.
Ingredients
- 1 cup granulated sugar plus 1/4 cup for rolling the cookies in
- 1 cup peanut butter
- 2 Tablespoons cocoa powder
- 1 egg large
Instructions
- Preheat the oven to 350 F.
- Line cookie sheet with a baking mat.
- Stir together 1 cup granulated sugar, peanut butter, cocoa powder and egg until blended.
- Roll into 1" balls (or use a cookie scoop).
- Roll the cookie dough balls in 1/4 cup granulated sugar.
- Place on a cookie sheet and then press down with a fork twice to make a crisscross pattern on each cookie.
- Bake for 12 minutes until the cookies are just set.
- Allow them cool on the tray for a couple of minutes before moving to a wire rack to finish cooling.
Notes
- Store cookies in an airtight container at room temperature for up to one week.
- Place a piece of bread in the container with the cookies to help keep them soft.
