  • 1 cup granulated sugar plus 1/4 cup for rolling the cookies in
  • 1 cup peanut butter
  • 2 Tablespoons cocoa powder
  • 1 egg large

Instructions

  1. Preheat the oven to 350 F.
  2. Line cookie sheet with a baking mat.
  3. Stir together 1 cup granulated sugar, peanut butter, cocoa powder and egg until blended.
  4. Roll into 1" balls (or use a cookie scoop).
  5. Roll the cookie dough balls in 1/4 cup granulated sugar.
  6. Place on a cookie sheet and then press down with a fork twice to make a crisscross pattern on each cookie.
  7. Bake for 12 minutes until the cookies are just set.
  8. Allow them cool on the tray for a couple of minutes before moving to a wire rack to finish cooling.

Notes

  • Store cookies in an airtight container at room temperature for up to one week.
  • Place a piece of bread in the container with the cookies to help keep them soft.
