Chocolate Peanut Butter Overnight Oats
Description
This recipe blends old-fashioned oats with cocoa powder, milk (dairy or plant-based), sweetened with pure maple syrup and vanilla. Once combined, the mixture is portioned into jars and topped with peanut butter before chilling for at least two hours or overnight to hydrate the oats and develop flavor. Just before serving, chopped roasted peanuts add texture.
The overnight refrigeration allows the oats to absorb the liquids fully, resulting in a creamy consistency without cooking on the stove. The cocoa powder and peanut butter offer a familiar chocolate and nutty flavor combination, while the maple syrup provides natural sweetness.
The oats can be eaten cold directly from the fridge or gently warmed as preferred. Variations include adding yogurt, protein powder, or spices for enhanced nutrition or flavor. The recipe can be prepared in advance and stored up to four days though best consumed within a day to retain ideal texture.
Ingredients
- 2 cups oats old-fashioned, gluten-free if needed
- 1 ½ Tbsp. cocoa powder unsweetened
- 2 cups milk regular or plant-based
- ⅓ cup pure maple syrup or honey
- 1 tsp. vanilla extract
- ¼ cup peanut butter creamy or crunchy
- ¼ cup peanuts roasted, coarsely chopped
Instructions
- Combine the Ingredients: In a large bowl whisk together oats and cocoa powder. Add milk, maple syrup, and vanilla. Stir until well combined.
- Pour into Jars: Add equal amounts of the oats to four 8-oz. mason jars. Top each jar with one tablespoon of peanut butter.
- Chill in Fridge: Refrigerate for at least 2 hours before serving. Just before serving add 1 tablespoon chopped peanuts and enjoy!
Notes
- Old-fashioned rolled oats create the best creamy texture for overnight oats.
- Enjoy the oats cold or warm by reheating briefly in the microwave.
- Make a batch ahead for up to 3–4 days of breakfasts, but note texture may soften over time.
- Additions like yogurt, protein powder, or spices can personalize flavor and nutrition.
