Chocolate Peanut Butter Rice Krispie Treats
Description
The recipe starts by melting butter with regular marshmallows over low heat, incorporating creamy peanut butter into the smooth mixture. Rice Krispies cereal and mini marshmallows are folded in to add crunch and chewiness. The mixture is then transferred to a prepared baking dish and lightly pressed to form an even layer without compressing tightly.
A topping is made by melting Reese’s peanut butter morsels, chocolate chips, and a tablespoon of peanut butter to a glossy finish, which is poured over the treat base. Optional additions like mini peanut butter cups or Reese's Pieces can be mixed into the base for added texture and flavor. The treats firm up as they cool, combining crunchy cereal with creamy chocolate-peanut butter layers.
These bars are suited for a snack or dessert featuring a classic sweet peanut butter and chocolate combination with familiar Rice Krispies texture. The topping can be hardened by chilling before serving for a firmer bite.
The notes suggest refrigerating for quicker setting of the chocolate topping and recommend cutting into squares immediately before serving to retain freshness.
Ingredients
- 10 ounces marshmallows regular sized
- 1/4 cup butter unsalted
- 1/2 cup peanut butter creamy
- 5 cups Rice Krispies cereal
- 1 cup mini marshmallows
For the Topping/ Mix Ins
- 1 cup Reese's peanut butter morsels
- 1 cup chocolate chips
- 1 tablespoon peanut butter
- 1 cup Reese's mini peanut butter cups (optional)
- 1 cup Reese's Pieces (optional)
Instructions
- Line a 9x9" or 12x8" baking dish with parchment paper (or spray very well with cooking spray). Set aside until ready to use. In a large pot, melt butter over low to medium-low heat. Add marshmallows and turn the heat to low. Stir constantly until the marshmallows are melted and completely smooth.

- Fold in the mini marshmallows (you can also stir in a few handfuls of Reese's pieces and peanut butter cups if desired to incorporate the candies into the bars).
- Pour mixture into prepared baking dish. DO NOT PRESS them in tightly. Just very gently even the top of the treats (use the butter wrapper to press it in).
- In a microwave-safe bowl, add the peanut butter chips, chocolate chips, and 1 tablespoon of peanut butter.Microwave at 50% power for 45 seconds at a time, stirring each time, until melted and the chocolate is shiny.
- Pour the melted chocolate mixture over the top of the Rice Krispie treats and smooth with a rubber spatula. Top with peanut butter cups and Reese's Pieces.
- Allow to set, for about one hour. Cut into squares and store in an airtight container.
Notes
- Reese's candies and chocolates are optional and can be omitted to keep treats simpler.
- Refrigerate for 30 minutes before serving to help the chocolate topping harden faster.
- For best freshness, cut into squares just before serving.
