Chocolate Pecan Pie Bars
Description
The Chocolate Pecan Pie Bars start with a crust made from all-purpose flour, brown sugar, salt, and softened butter mixed until crumbly and baked briefly. The filling blends eggs, granulated sugar, light corn syrup, vanilla extract, melted butter, chopped pecans, and semi-sweet chocolate chips for a sweet, nutty, and chocolatey topping. Pouring this filling over the still-warm crust and returning it to the oven allows it to bake until just set, with a texture firm enough to slice into bars.
When cooled completely, the bars can be stored at room temperature for short periods or refrigerated due to their egg-based filling. They can also be frozen after slicing, wrapped tightly to maintain freshness. For gluten-free adaptation, substituting the crust flour with a gluten-free blend is recommended, keeping the rest of the recipe unchanged.
Ingredients
To make the crust:
- 1 1/2 cups all-purpose flour
- 1/4 cup brown sugar packed
- 1/2 teaspoon salt
- 1/2 cup butter softened, unsalted
To make the filling:
- 3 egg large
- 3/4 cup sugar granulated white
- 3/4 cup light corn syrup
- 1 teaspoon vanilla extract
- 2 Tablespoons butter melted, unsalted
- 1 1/2 cups pecans chopped
- 1 3/4 cups chocolate chips semi-sweet
Instructions
- Preheat oven to 350 degrees F. Grease a 9 x 13 pan with cooking spray and set aside.
- Combine the flour, brown sugar, salt, and 1/2 cup softened butter in a medium sized bowl and beat with an electric mixer until crumbly. Press evenly into bottom of the prepared pan. Bake for 12-15 minutes.
- Meanwhile, whisk together the eggs, granulated sugar, vanilla extract, corn syrup, and 2 Tablespoons melted butter in a medium sized bowl. Fold in the pecans and chocolate chips.
- Pour the filling over the top of the warm crust. Return pan to oven and bake for 25-30 minutes, or until filling is set.
- Allow to cool completely on wire rack before cutting into bars.
Notes
- Store bars in an airtight container on the counter if serving same day; refrigerate if storing longer due to eggs in the filling.
- To freeze, wrap sliced bars tightly with plastic wrap and foil, then thaw overnight in the refrigerator before serving.
- Use gluten-free flour blends in the crust to make these bars gluten free without altering other ingredients.
