Description
This Chocolate Peppermint Bark recipe involves melting high-quality dark chocolate and spreading it evenly into a parchment-lined pan, then chilling until set. Separately, white chocolate is melted and mixed with crushed peppermint candy before pouring over the dark chocolate base. Additional peppermint is sprinkled on top before the combined layers are chilled again until firm. Once set, the bark is removed from the pan and broken into smaller pieces. The dark chocolate base offers a slightly bitter contrast to the sweet, minty white chocolate topping with peppermint pieces adding crunch and bright flavor. The layered structure and peppermint candy create a textured confection ideal for holiday gifting and snacking.
Ingredients
- 4 3.5 oz dark chocolate good quality, bars
- 1 teaspoon peppermint extract optional, pure
- 4 3.5 oz white chocolate good quality, bars
- ⅓ cup Peppermint candy divided
Instructions
- Line a 9×12 pan with parchment paper.
- In a microwave safe bowl, melt the dark chocolate until it is smooth and glossy in 30 second intervals for 2-3 minutes, stirring after each interval. Pour the melted dark chocolate on the parchment paper and use a rubber spatula to spread it out evenly. Refrigerate until it sets, about 30 minutes.
- In another microwave safe bowl, melt the white chocolate until it is smooth and glossy, in 30 second intervals for 2-3 minutes, stirring after each interval. Stir in half of the crushed pepper candy into the white chocolate. Pour the white chocolate on top of the solid dark chocolate and spread out evenly on top of the dark chocolate layer. Sprinkle the remaining peppermint on top.
- Place in the refrigerator until set, about 1- 2 hours. Remove from parchment paper and break into smaller pieces.
Notes
- Store the peppermint bark either at room temperature or in the refrigerator to keep it fresh for up to two weeks.
- For freezing, wrap individual pieces tightly in parchment or wax paper and then plastic wrap or foil to avoid discoloration, and store in an airtight container for 2 to 3 months.
