Chocolate Protein Brownies Recipe
Description
This recipe combines almond flour, collagen powder, cacao powder, cane sugar, baking powder, and a few liquid ingredients including avocado oil, peanut butter, hemp milk, eggs, and vanilla. The wet ingredients are whisked until semi-smooth, then incorporated into the dry mix, producing a thick batter suitable for spreading rather than pouring. Mini chocolate chips are folded in for bursts of chocolate. The mixture is pressed evenly into a parchment-lined 8x8 pan and baked at 350°F for 25 minutes. After cooling, a drizzle made by melting mini chocolate chips with coconut oil is added. The brownies should be cooled completely before slicing to maintain their delicate structure. Ingredients
- 1 cup almond flour
- ¼ cup collagen powder
- 1 teaspoon baking powder
- 2 egg
- 1 teaspoon vanilla extract
- ¼ cup mini chocolate chips make sure they're dairy and gluten free
- 2.5 tbs avocado oil
- ¼ cup cacao powder
- ⅓ cup cane sugar
- 2 tbs peanut butter
- ⅛ cup hemp milk

- ⅛ Cup mini chocolate chips
- 1 teaspoon coconut oil
Instructions
- Preheat the oven to 350 degrees Fahernheit.
- In a large bowl, mix together all the dry ingredients except the chocolate chips and pecans.
- In a smaller bowl, whisk the wet ingredients until semi-smooth.
- Pour the wet into the dry and mix well.
- Fold in the chocolate chips and pecans.
- Line an 8x8 baking tray with parchment paper and dump/scrape out the batter.
- Use a silicone spatula to smooth and portion it out until even.
- Bake for 25 minutes. Remove from the oven and let cool.
- Once cooled, heat the chocolate chips and coconut oil in a double boiler until just melted. Whisk them together and drizzle over the brownies.
- Cut into 9 squares.
Notes
- The batter is very thick; use a spatula to spread it evenly in the pan.
- Allow the brownies to cool fully before slicing to prevent crumbling.
- Store in the fridge because of eggs, but serve at room temperature for best flavor.
- Protein powder cannot be substituted for collagen powder here.
- The chocolate drizzle may carry a slight coconut flavor depending on the coconut oil used.
