Chocolate Pudding

This chocolate pudding blends cornstarch, cocoa powder, sugar, and milk to create a smooth, creamy dessert with a rich chocolate flavor. Cooking the mixture until it thickens and then chilling it ensures a silky texture without any skin forming. Small amounts of butter and vanilla extract added at the end impart a subtle richness and aroma.

Description

Chocolate Pudding features a simple base made by stirring together cornstarch, unsweetened cocoa powder, sugar, and a pinch of salt before slowly combining with cold whole milk. Cooking the mixture over medium heat while stirring until it boils thickens it into a creamy custard. After boiling briefly, it is removed from heat and enriched with small pieces of butter and a teaspoon of vanilla extract to soften and complement the chocolate flavor. Covering the pudding surface directly with plastic wrap prevents a skin from forming as it cools. Refrigeration allows it to set firmly, resulting in a smooth texture perfect for a classic cocoa dessert. This pudding works well on its own or as a base for toppings like fresh fruit or whipped cream.

  • ½ cup cocoa powder unsweetened
  • 1 cup granulated sugar
  • dash salt
  • 4 cups milk whole

  • 1 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, stir together cornstarch, cocoa powder, sugar, and salt. Slowly stir in cold milk until combined.
  2. Turn heat to medium and cook, stirring constantly, until mixture comes to a boil. Boil for 1 minute, then remove from heat and stir in butter and vanilla extract.
  3. Place a piece of plastic wrap directly over the pudding, so the pudding doesn’t form a skin on top as it cools. Allow to cool and refrigerate for at least an hour to allow it to set up.
