Description
Chocolate Pudding features a simple base made by stirring together cornstarch, unsweetened cocoa powder, sugar, and a pinch of salt before slowly combining with cold whole milk. Cooking the mixture over medium heat while stirring until it boils thickens it into a creamy custard. After boiling briefly, it is removed from heat and enriched with small pieces of butter and a teaspoon of vanilla extract to soften and complement the chocolate flavor. Covering the pudding surface directly with plastic wrap prevents a skin from forming as it cools. Refrigeration allows it to set firmly, resulting in a smooth texture perfect for a classic cocoa dessert. This pudding works well on its own or as a base for toppings like fresh fruit or whipped cream.
Ingredients
- 5 Tablespoons cornstarch
- ½ cup cocoa powder unsweetened
- 1 cup granulated sugar
- dash salt
- 4 cups milk whole
- 2 Tablespoons butter . chopped into small pieces
- 1 teaspoon vanilla extract
Instructions
- In a medium saucepan, stir together cornstarch, cocoa powder, sugar, and salt. Slowly stir in cold milk until combined.
- Turn heat to medium and cook, stirring constantly, until mixture comes to a boil. Boil for 1 minute, then remove from heat and stir in butter and vanilla extract.
- Place a piece of plastic wrap directly over the pudding, so the pudding doesn’t form a skin on top as it cools. Allow to cool and refrigerate for at least an hour to allow it to set up.
Notes
- This pudding can be prepared one to two days ahead and refrigerated until serving for convenience.
