Chocolate Raspberry Truffles

Chocolate Raspberry Truffles combine semisweet chocolate and whipping cream melted together into a smooth ganache, blended with crushed freeze-dried raspberries, then shaped into small balls. Coated again in melted chocolate and dusted with raspberry powder, these truffles offer a rich chocolate flavor accented by bright tartness and a tender texture, served chilled.

Description

This recipe starts by gently melting semisweet chocolate with whipping cream to create a creamy ganache base. Freeze-dried raspberries are finely crushed and folded into the ganache, introducing concentrated berry flavor and a slight texture contrast. The mixture is scooped and hand-rolled into walnut-sized balls.

The truffles are then dipped in more melted semisweet chocolate for a smooth, glossy coating. While still wet, crushed freeze-dried raspberries are sprinkled on top to add a vivid fruit note and decorative finish. Once cooled in the refrigerator, the truffles become firm yet yielding, combining silky chocolate with raspberry's tart brightness.

These truffles are stored chilled until serving, preserving their texture and flavor. The approach offers a relatively straightforward way to produce elegant chocolate confections with fresh fruit accent without cooking complex ingredients or tempering chocolate.

Ingredients

Servings
  • 2 cups chocolate chips semi-sweet
  • 1/4 cup whipping cream
  • 1 cup freeze-dried raspberries

For the Coating

  • 1 cup chocolate chips
  • 3 tbsp freeze-dried raspberries

Instructions

  1. Prepare all ingredients for the recipe.
  2. Place the chocolate chips and whipping cream into a bowl. Next, microwave the mixture in 30 second increments, stirring between each one until smooth.
  3. Blend the freeze-dried raspberries until they're finally crushed, then add them into the melted chocolate. Use a cookie scoop to portion out the truffle batter. Next, use your hands to shape the batter into a ball shape about the size of a walnut.
  4. Melt the chocolate chips until smooth. Dip each truffle into the melted chocolate and sprinkle it with crushed raspberries on top.
  5. Store the truffles in the refrigerator until you're ready to serve them. Enjoy!
