Ingredients

Servings
  • 6 tablespoons butter unsalted
  • 16 ounce mini marshmallows divided, bag plus additional 2 cups
  • 3 tablespoons cocoa powder unsweetened
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt plus more for sprinkling
  • 8 cups crispy rice cereal
  • 1 cup chocolate chips
  • chocolate for drizzling, optional, melted

Instructions

  1. Grease a 9x13-inch baking pan with nonstick cooking spray. You can line with parchment paper, if desired. Set pan aside.
  2. In a large pot, melt the butter over medium heat. Add the 16 oz bag of marshmallows and stir until the marshmallows are completely melted. Don't overcook or the marshmallows will get hard.
  3. Remove the pan from the heat and stir in the cocoa powder, vanilla, and sea salt. Add the rice krispies and gently stir until the cereal is well coated with the marshmallows. Stir in the chocolate chips and remaining 2 cups of mini marshmallows. The chocolate chips will melt into the treats.
  4. Transfer mixture to the prepared pan. Lightly press the mixture into the pan, using a greased spatula. You can also lightly grease your hands and press the mixture into the pan. Sprinkly with flaky sea salt, if desired. You can also drizzle with a little melted chocolate if you want to.
  5. Let the Rice Krispie Treats cool before cutting. Cut into squares and serve.

Notes

  • Cover pan with plastic wrap or put the treats in an airtight container and store on the counter for up to 3 days.
