Chocolate Rice Krispie Treats

Chocolate Rice Krispie Treats combine buttery marshmallow with crisp cocoa-flavored rice cereal, creating a soft yet slightly crunchy dessert bar. The addition of melted chocolate chips in the mixture and a chocolate butter drizzle topping gives these bars a rich chocolate finish. The texture is chewy with bursts of cocoa taste throughout, making them a satisfying treat for chocolate lovers.

Description

Chocolate Rice Krispie Treats are made by melting butter with salted marshmallows and vanilla, then stirring in chocolate chips until smooth. Cocoa-flavored crispy rice cereal is mixed in to coat each piece fully before pressing the mixture into a lined baking dish. A finishing drizzle of melted semi-sweet chocolate and butter adds an extra layer of chocolate flavor and moisture. The treats are best cut into squares and enjoyed as a handheld sweet snack with a satisfying balance of soft marshmallow and crunchy cereal.

The method avoids compacting the mixture to maintain a lighter texture, letting the bars hold airiness while still binding well. The cocoa cereal gives a deeper chocolate taste compared to traditional rice krispie treats. The optional chocolate sprinkles garnish adds a subtle crunch contrast and visual appeal.

These bars are a convenient snack or dessert that can be easily portioned and served at gatherings or casual occasions. They store well cut into 2-inch squares, allowing flexibility in serving size.

Cutting the treats into uniform pieces helps portion control, and keeping the topping slightly melty while drizzling ensures a pretty finish. Using unsalted butter allows control over the salt balance and enhances the chocolate and marshmallow flavors.

Ingredients

Servings
  • 6 tablespoons butter unsalted
  • ¼ teaspoon kosher salt coarse
  • 10 ounces mini marshmallows about 6 cups
  • 1 teaspoon vanilla extract
  • 6 cups cocoa krispies cereal
  • ½ cup chocolate chips

Topping

  • ¼ cup semi sweet chocolate chips
  • 1 tablespoon butter unsalted
  • chocolate sprinkles , for garnish, optional

Instructions

Bars:

  1. Line a 9”x13” baking dish with wax paper or parchment paper. Set aside.
  2. Pour the cocoa krispie rice cereal into the large bowl, and set aside.
  3. In a large pot, melt the butter over low heat. Add the salt when mostly melted.
  4. Stir in the marshmallows once the butter has melted. Continually stir until the marshmallows are completely melted. Add the vanilla, and stir.
  5. Add the chocolate chips. Stir until melted and smooth.
  6. Pour the cereal into the marshmallow mixture. Stir quickly until the cereal is coated.
  7. Pour the cereal bar mixture to the prepared baking dish and gently spread the mixture into an even layer with a rubber spatula. (If the mixture begins sticking, spritz the spatula with the nonstick cooking spray.) Do not press down hard on the mixture, as your treats will be more compact.

Topping:

  1. In a small saucepan over low heat or a microwave safe bowl for 30 seconds, melt the chocolate chips and butter together. Drizzle over the bars in a pattern. Sprinkle on the chocolate sprinkles while the chocolate mixture is still tacky.
  2. Let the treats cool completely, about 45 minutes-1 hour.
  3. Cut into squares with a sharp knife, and enjoy within 2-3 days.

Notes

  • Cut treats into about 2-inch squares; adjust size to desired portion.
  • Use wax or parchment paper to line the dish for easy removal and cleanup.
  • Do not press the cereal mixture down too firmly to keep the texture light.
  • Spray your spatula with nonstick spray when spreading the mixture to prevent sticking.
  • The chocolate drizzle should be poured warm for easy spreading and visual appeal.
