Chocolate Souffle
Description
The souffle begins with melting unsalted butter and baking chocolate together until smooth. Egg yolks, vanilla, and salt are whisked into this mixture to add richness and flavor. Separately, egg whites are whipped with cream of tartar until stiff and glossy peaks form after sugar is gradually added. The whipped egg whites are then folded gently into the chocolate mixture to preserve airiness.
The batter is spooned into well-buttered ramekins, which help the souffle rise evenly and prevent sticking. Baking at 375°F for about 13-15 minutes results in souffles with a puffed, soft peak exterior and creamy, gently set centers. A light dusting of powdered sugar finishes the presentation.
Chocolate Souffles are best served promptly upon removal from the oven to enjoy their full airy lift and tender texture. They provide a rich yet light chocolate dessert suitable for special occasions or a refined finish to a meal.

Ingredients
- 4 tablespoons butter plus more for greasing, unsalted
- 5 ounces baking chocolate
- 4 egg separated at room temperature, large
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch salt
- ¼ teaspoon cream of tartar
- powdered sugar for dusting
Instructions
- Preheat the oven to 375°F. Butter 4 6-ounce ramekins generously.
- Place the butter and chocolate in a large microwave safe bowl and microwave in 30-second increments until completely melted, stirring after each increment.
- Use an electric mixer to whisk the egg yolks, vanilla and salt into the melted butter and chocolate until well combined, set aside.
- Wash the electric mixer beaters well. Then beat the egg whites and cream of tartar in another clean bowl until they hold soft peaks, about 2 minutes. Continue beating and gradually add the sugar until the egg whites are very stiff and glossy.
- Gently fold the whipped egg whites into the chocolate mixture a little portion at a time until combined, being careful not to deflate the egg whites.
- Transfer into the prepared ramekins. Bake for 13-15 minutes or until the center is nearly set. Dust with powdered sugar before serving.
