Description

The Chocolate Strawberry Cake uses a chocolate cake base made with flour, sugar, dark cocoa powder, baking powder and soda, eggs, sour cream, buttermilk, warm water with espresso powder, oil, and vanilla extract. Mixing these ingredients produces a moist chocolate cake with tender crumb and layers that hold well for stacking.

The strawberry frosting incorporates softened unsalted butter, powdered sugar, vanilla, finely diced strawberries, and heavy cream. This creates a creamy, slightly fruity buttercream with bright notes from the fresh strawberries, adding contrast to the chocolate cake. The frosting is whipped to peaks to provide stability for layering and decorating.

To assemble, the cake layers are stacked with generous amounts of strawberry frosting between and on top. Fresh strawberries are used as a decorative topping for added texture and color. Ingredients

  • 3 cups flour
  • 3 cups granulated sugar
  • 1 1/2 cups cocoa powder special dark chocolate
  • 1 Tablespoon baking powder
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon kosher salt
  • 4 egg large
  • 1/2 cup sour cream
  • 1 cup buttermilk
  • 1 1/2 cups water warm
  • 1/2 teaspoon espresso powder
  • 1/2 cup canola oil
  • 1 Tablespoon vanilla extract pure

Strawberry Frosting

  • 2 cups butter softened, unsalted
  • 6 cups powdered sugar
  • 4 teaspoon vanilla extract
  • 1/2 cup strawberries finely diced
  • 5-7 Tablespoons heavy whipping cream
  • strawberries fresh, for topping

Chocolate Ganache

  • 1 cup semi sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  1. Preheat oven to 350 degrees and spray three 9 in cake pans with baking spray.
  2. In a small bowl, whisk together the espresso and the warm water until combined.
  3. Using your standing mixer, whisk together the flour, sugar, cocoa powder, baking soda, baking powder and salt until combined.
  4. Gradually add in the eggs, sour cream, buttermilk, espresso, oil and vanilla extract until combined.
  5. Divide the batter between the 3 pans.
  6. Place in the oven to bake for 25-35 minutes or until a tooth pick comes out clean.
  7. Allow cakes to cool for 20 minutes.

Strawberry Frosting

  1. Using a standing mixer, cream together the butter, vanilla, powdered sugar, diced strawberries and heavy whipping cream until combined and creamy and stiff with peaks.
  2. Scoop 1 cup of frosting into the piping bag.

Building the Cake

  1. Place 1 layer of cake onto the cake board.
  2. Using the ice cream scooper, scoop out 4-6 scoops of frosting and smooth evenly on one layer of cake.
  3. Place another layer of cake on top and spread more frosting.
  4. Place the last layer on top and frost the remaining cake with remaining frosting.

Chocolate Ganache

  1. Using a small pot, heat up the heavy whipping cream until steaming.
  2. While heavy whipping cream is heating up, place chocolate chips into a heat-proof bowl.
  3. Once the heavy whipping cream is heated, pour over the chocolate chips.
  4. Allow to sit for 1 minute before whisking until smooth.
  5. Pour ganache into the squeeze bottle.
  6. Pipe ganache over the edge of the cake.

Decorating

  1. Pipe dollops of frosting onto the top of the cake.
  2. Place fresh strawberries into the dollops of frosting.
  3. Cut and serve and enjoy!
