Ingredients

  • 1 Cup butter softened, unsalted
  • 1 Cup sugar
  • 1 large egg
  • 2 tsp vanilla extract pure
  • 2 Cup flour
  • 1/2 Cup cocoa powder dark chocolate
  • 1 1/2 tsp kosher salt
  • 2 Cup sugar to roll the cookie dough in
  • 1 Cup Sprinkles optional, Christmas

Chocolate ganache

  • 1 Cup chocolate chips semi-sweet
  • 1/2 Cup heavy whipping cream

Instructions

  1. Preheat oven to 350 degrees and line 2 cookie sheets with parchment paper.
  2. Using a large bowl, beat together the butter and sugar until light and fluffy.
  3. Beat in the egg, vanilla until combined.
  4. In a medium bowl, whisk together the flour, cocoa powder, and kosher salt.
  5. Gradually beat in the dry ingredients until combined.
  6. Pour the 2 C sugar into a small bowl.
  7. Using a small ice cream scooper, scoop the cookie dough into your hand and roll into a ball.
  8. Roll the cookie dough ball in the sugar.
  9. Place onto the cookie sheet and use a tablespoon to make an indent into the center of the cookie dough ball.
  10. Place into the oven and bake for 8 minutes.
  11. Allow cooling completely.

Chocolate ganache

  1. Using a small pot, bring the heavy whipping cream to a simmer.
  2. Pour over the chocolate chips into a heatproof bowl.
  3. Allow sitting for a minute before whisking until smooth.
  4. Allow the ganache to sit to cool for 5 minutes.
  5. Spoon into the piping bag.
  6. Fill in the center of the cookie with the ganache.
  7. Sprinkle some Christmas sprinkles on top.
  8. Enjoy!
