Chocolate Wacky Cake
Description
Chocolate Wacky Cake uses common pantry ingredients including flour, sugar, cocoa powder, baking soda, and vinegar to create a surprisingly tender and fluffy chocolate dessert. The use of vinegar in combination with baking soda initiates a chemical reaction that helps the cake rise without eggs. Coffee is added alongside water to boost the richness of the chocolate taste without overpowering it. The batter is mixed carefully by making wells in the dry ingredients to hold wet ones separately until combined, a technique ensuring even rising.
Baked in a square pan at a moderate temperature, it develops a moist crumb with the signature velvety texture of a well-made chocolate cake. After allowing it to cool completely in the pan, a chosen chocolate frosting is spread on top to complement the cake's subtle cocoa notes.
The process honors traditional approaches that avoid creaming or beating, meaning there is little aeration before baking; instead, the reaction between vinegar and baking soda provides the lift. This cake can serve well as a simple dessert or for casual occasions where a straightforward, classic chocolate flavor is desired.
Ingredients
- 1 ½ cups all-purpose flour 190g
- 1 cup granulated sugar 200g
- ¼ cup cocoa powder 30g, unsweetened
- 1 teaspoon baking soda
- ½ teaspoon salt
- ⅓ cup vegetable oil 100ml
- 1 tablespoon apple cider vinegar or white vinegar
- 1 teaspoon vanilla extract
- ½ cup water 120ml, cold tap
- ½ cup coffee or additional water 120ml, cold brewed
- chocolate frosting
Instructions
- Preheat your oven to 350°F (175°C).
- Take an 8x8-inch (20cm square) baking pan and line it with baking parchment paper.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
- Create three wells in the flour mixture. Make one large well and two smaller ones.
- Pour the oil into the large well, vinegar into one of the smaller wells, and vanilla into the third well. Note: It's important to keep the wet ingredients separate until they are stirred into the batter simultaneously to ensure the cake turns out properly.
- Add the cold coffee and water into the mixing bowl, and mix everything until well-blended without any lumps.
- Pour the batter into the prepared pan.
- Place the pan in the preheated oven and bake for approximately 25 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Allow the cake to cool in the pan.
- Once the cake has cooled, coat it with frosting of your choice.
- Cut the cake into slices and serve.
Notes
- Sift the flour, cocoa powder, and baking soda to prevent lumps and ensure an even cake texture.
- Keep the wet ingredients separated until mixing to allow proper activation of the leavening agents.
- Preheat the oven fully before preparing the batter for best rise and texture.
- Allow the cake to cool completely before frosting to prevent melting and sliding.
