  • 1 cup granulated sugar 200g
  • ¼ cup cocoa powder 30g, unsweetened
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • cup vegetable oil 100ml
  • 1 tablespoon apple cider vinegar or white vinegar
  • 1 teaspoon vanilla extract
  • ½ cup water 120ml, cold tap
  • ½ cup coffee or additional water 120ml, cold brewed
  • chocolate frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Take an 8x8-inch (20cm square) baking pan and line it with baking parchment paper.
  3. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, and salt.
  4. Create three wells in the flour mixture. Make one large well and two smaller ones.
  5. Pour the oil into the large well, vinegar into one of the smaller wells, and vanilla into the third well. Note: It's important to keep the wet ingredients separate until they are stirred into the batter simultaneously to ensure the cake turns out properly.
  6. Add the cold coffee and water into the mixing bowl, and mix everything until well-blended without any lumps.
  7. Pour the batter into the prepared pan.
