Ingredients

  • 500 grams all-purpose flour
  • 265 grams milk scalded
  • 10 grams salt
  • 75 grams sugar
  • 20 grams cocoa powder
  • 25 grams fresh yeast
  • 75 grams egg
  • 50 grams butter unsalted
  • 5 grams baking powder
  • cooking oil for frying

Instructions

  1. Place all the ingredients into the mixing bowl with the hook attached.
  2. Mix the doughnut dough for 4 minutes on slow speed, then increase the speed and mix for 5-6 minutes on higher speed. Mix the dough until full gluten development.
  3. Remove the dough from the machine and form it into a large ball shape. Cover with a plastic sheet and allow the dough to rest for 15 minutes.
  4. Roll the dough out using a rolling pin to about 2 inches in thickness.
  5. Using your doughnut cutter, cut out pieces and place them onto a line baking sheet with parchment. What I like to do is coat the parchment paper with a little bit of oil to prevent the doughnut from sticking during the proofing stage.
  6. Cover the doughnut tray with a plastic sheet or cloth and allow them to proof in a warm spot for about 45-60 minutes.
  7. Fill a deep fryer or electric fryer with about 3-4 inches of oil. Heat the oil to 185°C (365°F) using a candy thermometer.
  8. Using a skimmer or stick, carefully drop 2 doughnuts at a time into the hot oil and fry each side for 80-90 seconds.
  9. Removed the fried doughnuts and place them onto paper towels or a wire rack to drain the oil and cool down.
  10. You can enjoy these chocolate doughnuts as is, dip them in chocolate, or simply dust them with icing sugar or coat them with sugar. duet with icing sugar, or toss them into sugar.
