Description
This recipe combines whole-milk plain Greek yogurt with unsweetened Dutch-processed cocoa powder and a sweetener such as stevia glycerite. Mixing gently produces a creamy and uniform texture. If the mixture is too thick, a little water can be added to reach a mousse-like consistency. Resting the yogurt for 10 to 30 minutes at room temperature helps develop the flavors evenly.
The flavor is a mild, rich chocolate balanced by the tangy yogurt. Its thick, creamy consistency makes it a suitable healthy dessert or snack on its own or paired with fruit.
You can vary this base by adding half a teaspoon of vanilla, almond, coconut, or orange extract for extra flavor notes. Using stevia glycerite replaces sugar, but other sweeteners like honey or maple syrup can be substituted with adjustments in liquid for consistency.
Ingredients
- 1 cup Greek yogurt whole-milk, plain. I use Fage
- 2 tablespoons cocoa powder processed with alkali, unsweetened
- ½ teaspoon stevia glycerite equals about 2 tablespoons of sugar
Instructions
- Place the yogurt in a medium bowl.
- Add the cocoa powder and your sweetener.
- With a spoon, mix slowly and thoroughly, until the mixture is uniform and creamy. If the mixture is too thick, add a tablespoon or two of water.
- Let the yogurt rest at room temperature for 10-30 minutes to allow the flavors to meld.
- Mix one more time and dig in!
