Chopped Salad with Shrimp, Blue Cheese and Bacon

This Chopped Salad features crisp butter lettuce with sautéed shrimp cooked in bacon fat, crispy bacon pieces, blue cheese, cherry tomatoes, avocado, and grilled corn kernels. The salad is lightly dressed with olive oil and seasoned with salt and pepper, offering a balance of savory, creamy, and fresh flavors.

Description

The salad begins with cooking chopped bacon until crisp, which infuses the pan with flavorful fat. Shrimp and garlic are then cooked briefly in the reserved bacon grease, providing a savory, aromatic protein with a slightly smoky undertone. The cooked shrimp is chopped into bite-sized pieces for easy eating. Butter lettuce forms the base of this salad, offering a tender yet slightly crisp texture. Grilled or roasted corn cut from the cob is mixed in, adding sweetness and a slight char flavor. Cherry tomatoes and diced avocado contribute freshness and creaminess. Blue cheese or gorgonzola crumbles add a sharp, tangy contrast.

The salad is served immediately with a drizzle of olive oil and seasoning, preserving the varied textures from the crisp bacon to the tender shrimp and creamy cheese. This combination makes the salad rich and filling enough for a light meal or a hearty starter.
