Chorizo Chickpea Stew (Spanish)
Description
This Spanish-inspired stew starts by browning sliced smoked chorizo in olive oil, which releases its smoky fat flavor. Onion, garlic, and jalapeño are sautéed alongside spices including oregano, smoked paprika, chili powder, and a bay leaf, building a fragrant aromatic foundation. Adding crushed tomatoes, chickpeas, and chicken broth simmers to meld the flavors while thickening the sauce. The resulting stew is rich and moderately spicy, with the smoky chorizo flavor balancing the earthiness of chickpeas. Salt and pepper are adjusted to taste. Ingredients
- 1 tablespoon olive oil
- 2 cups chorizo (2 smoked sausage, thinly sliced (see notes below))
- 1 small onion (finely diced)
- 4 cloves garlic (minced)
- 1 large jalapeño (seeds removed)
- 1 tablespoon oregano dried
- 2 teaspoon smoked paprika (or paprika)
- 2 tablespoon chili powder
- 1 bay leaf
- 14 oz crushed tomato canned
- 14 oz chickpeas drained and rinsed, canned
- 1 cup chicken broth (or vegetable broth)
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon black pepper (or to taste)
Instructions
- In a large frying pan or small pot on medium high heat, add the olive oil and sliced chorizo. Sauté the chorizo for 5-6 minutes or until nicely browned.
- Add in the onion, garlic, jalapeno, oregano, paprika, chili powder and bay leaf. Sauté for 2-3 minute or until the onion is tender.
- Add the crushed tomato, chickpeas, chicken stock, salt and pepper. Stir until evenly combined.
- Bring to a simmer then lower the heat to medium-low and let it simmer for 12-15 minutes uncovered, stirring often, or until the sauce has reduced and thickened.
- Remove the bay leaf.
- Serve and enjoy!
Notes
- If smoked chorizo is unavailable, substitute fresh sausage by removing casings, crumbling, and cooking thoroughly.
- Plant-based chorizo can be used for vegetarian or vegan versions of this stew.
