Chorizo & Green Bean Ragu

A fusion of Italian and Spanish cuisine, Chorizo & Green Bean Ragù is a really quick and tasty meal perfect for a midweek family meal.

Ingredients

Servings
  • 175 g green beans I used stringless, slice diagonally
  • 1 green pepper chopped
  • 150 g Cooking chorizo cut into small cubes
  • 1 tsp rapeseed oil
  • 1 tbsp tomato paste
  • 150 ml water
  • 390 g tomato carton; includes onion and garlic
  • 390 g onion
  • 390 g garlic
  • black pepper freshly ground
  • 350 g spaghetti or pasta shapes

Garnish

  • parsley optional, chopped

Instructions

  1. Heat the oil in a wok style pan and fry the chorizo until golden.
  2. Add the beans, green pepper and fry for a couple of minutes, stirring.
  3. Add the tomatoes with onion & garlic, tomato paste, water and ground pepper.
  4. Bring to the boil then lower to a simmer for 20 minutes until the beans are tender.
  5. Meanwhile cook the spaghetti or pasta according to instructions.
  6. Serve the ragù on a bed of pasta and garnish with chopped parsley if using.
