Description
This recipe begins with a crust of gingersnap cookie crumbs mixed with melted unsalted butter, pressed firmly into a baking pan. Successive layers of peanut butter chips and sweetened flaked coconut create varied textures and flavors beneath a layer of sweetened condensed milk that binds the layers when baked.
After baking, the bars are topped with visually festive M&M's and chopped pecans pressed gently onto the surface. A drizzle of melted white chocolate adds creamy sweetness, adorned with optional red, green, and white nonpareil sprinkles for a holiday appearance.
The bars bake at 350°F for about 25 minutes until set, then cool completely for slicing. They can be served as holiday treats or snacks. Their balance of spice from the gingersnap crust with the sweetness of chocolate and candy makes these bars distinctive.
Slicing can be adjusted to preferred bar sizes, making them convenient for sharing or serving.
Ingredients
- 2 cups gingersnap cookie crumbs
- 1/2 cup butter melted, unsalted
- 1 cup peanut butter chips
- 1 cup sweetened flaked coconut
- 14 oz can sweetened condensed milk
- 3/4 cup M&M's holiday colors or regular, mini
- 1/2 cup pecans chopped
- 1/3 - 1/2 cup white chocolate chips melted
- nonpareil sprinkles optional, red, green, and white
Instructions
- Preheat oven to 350 F degrees. Lightly spray a 9x13” baking pan with cooking spray, then line with parchment paper, leaving overhang over the sides.
MAKE CRUST
- Combine gingersnap crumbs and melted butter in a bowl, then press into an even layer in prepared baking pan.
LAYERS
- Top with peanut butter chips and coconut flakes, then pour condensed milk evenly over the top.
- Top with m&m’s and pecans, gently pressing down.
BAKE
- Bake for 25 minutes, then cool on a wire rack.
TOP AND COOL
- Melt white chocolate chips, then drizzle lightly over the top of the bars and lightly top with sprinkles.
- Let chocolate harden, then slice into squares and serve, or refrigerate.
Notes
- This recipe yields one 9x13-inch pan of bars.
- You can cut the bars into squares or rectangles of any size to suit snacking or serving needs.
