Christmas Cake Mix Cookies
Description
This recipe uses boxed white cake mix as a base, mixed with melted butter and eggs to form a soft dough. Dividing the dough allows flavor and color to be added separately: strawberry jello and red food coloring tint one half, while almond extract is mixed into the other. Small portions of each dough are rolled together to create a marbled effect in the cookies.
Baked at 350 degrees Fahrenheit for 8-10 minutes, the cookies develop cracks on the surface that indicate doneness. Once cooled, they reveal swirls of red and white dough with sweet, almond-infused flavor and a slight fruity note from the jello.
The cookies are festive and attractive for holiday gatherings or everyday treats. Variations using other flavors like cherry jello or adjustments to almond extract allow customization of taste and color.
The dough can be refrigerated a few days before baking, and baked cookies freeze well up to three months, making this recipe convenient for advance preparation.
