Christmas Coconut Balls Recipe

These Christmas Coconut Balls blend unsweetened shredded coconut with sweetened condensed milk, coconut oil, and vanilla extract for a rich, creamy base studded with M&M candies. They’re coated in melted semisweet chocolate and decorated with white chocolate to add festivity and texture. The balls firm in the refrigerator, resulting in sweet, coconutty confections with a chocolate coating that can be customized for holiday celebrations.

Description

Christmas Coconut Balls Recipe uses shredded coconut processed to a crumb-like texture combined with smooth condensed milk, solid coconut oil, and vanilla to form a moist, cohesive mixture. Incorporating colorful M&M candies introduces bursts of chocolate and crunch within the coconut base. Rolled into uniform spheres and chilled to set, these balls are then dipped in melted semisweet chocolate mixed with coconut oil to create a glossy coat that hardens upon refrigeration.

The final step involves drizzling or decorating with melted white chocolate to enhance the festive appearance, making them suitable as seasonal treats. The recipe relies on refrigeration rather than baking, preserving the coconut's natural flavor and texture. These bite-sized sweets offer a balance between chewy coconut interior and a crisp chocolate exterior.

This recipe is well-suited for holiday gatherings or gift-giving and can be prepared ahead of time due to its dependence on chilling. The combination of coconut, chocolate, and colorful candies makes it attractive for festive occasions.

Ingredients

Servings

For the Coconut Balls:

  • 2 cups unsweetened coconut (4 oz) desiccated coconut
  • 1/2 cup sweetened condensed milk
  • 5 Tbsp coconut oil 1/3 cup, solid form, not melted
  • 1 tsp vanilla extract
  • 1/2 cup M&M candies plus more to decorate, red and green colors

For the Coating & Topping:

  • 1 cup semisweet chocolate chips
  • 1 Tbsp coconut oil
  • 1/2 cup white chocolate chips melted

Instructions

How To Make Chocolate Coconut Balls:

  1. Pulse coconut in a food processor or blender until it is the consistency of bread crumbs then transfer to a bowl.
  2. Add 1/2 cup condensed milk, 5 Tbsp coconut oil, and 1 tsp vanilla. Stir until well combined then fold in 1/2 cup M&M's just until incorporated.
  3. Use a small cookie scoop to evenly portion balls and place onto a parchment-lined baking sheet. Roll balls between your hands to smooth the surface of the balls then refrigerate for 15 minutes.
  4. In a small microwave-safe bowl, combine 1 cup semisweet chocolate chips and 1 Tbsp coconut oil, heating in 15-second increments and stirring each time until chocolate melts (usually 45-60 seconds total in the microwave)
  5. Dip each ball in melted chocolate, allowing excess chocolate to drip back into the bowl. Transfer coconut balls to the parchment-lined baking sheet and refrigerate until firm.

To Decorate as Christmas Coconut Balls:

  1. Melt 1/2 cup white chocolate chips (30-45 seconds total in the microwave), transfer to a ziploc bag, snip off a corner and drizzle each coconut ball with melted white chocolate and top with M&M's right away before white chocolate sets.
