Cranberry syrup

  • 3 cups Cranberry frozen or fresh
  • 1 cup sugar
  • 1 cup water
  • 2 pieces orange peel
  • 1 prig rosemary
  • 2 star anise

Christmas Cranberry Sangria

  • cranberry syrup
  • 1 bottle prosecco
  • 2-3 cups soda water or club soda
  • rosemary fresh
  • Orange slices

Instructions

Cranberry syrup

  1. To make the syrup, combine all the ingredients in a saucepan and bring to a boil.
  2. Reduce the heat and simmer for 10 minutes until the cranberries are soft and the mixture has reduced slightly. 
  3. Remove from the heat and strain through a sieve, pushing down on the cranberries with the back of a spoon to get out all the juice.  Allow the syrup to cool completely.

Christmas Cranberry Sangria

  1. Fill a large jug with ice and pour over the cranberry syrup.
  2. Add the orange slices and rosemary then top with the Prosecco and soda water and serve.
