Christmas Ham With Apple Cider Glaze
Description
The recipe starts by simmering apple cider with cinnamon sticks over low heat for about two hours to reduce it to a thick, concentrated glaze. A fully cooked ham is placed in a roasting pan and brushed several times with a mixture of the reserved cider reduction, Dijon mustard, honey, and warming spices including cinnamon, nutmeg, and cloves. The ham is baked at 350°F for 15 minutes per pound, uncovered for the last 30 minutes to allow the glaze to caramelize. After baking, the ham is rested before slicing.
This glaze imparts a sweet, spiced flavor to the ham's exterior while keeping the interior tender and moist. The dish can be served with cranberry sauce to add a tart contrast. Leftovers can be stored refrigerated for up to 3-5 days and the ham bone is suitable for making soups like Split Pea and Ham Soup, extending the use of the roast.
This recipe is suitable for a festive meal centerpiece, providing a balanced blend of sweet and savory flavors with traditional holiday spices.
