Christmas Linzer Cookies

Christmas Linzer Cookies are tender almond-based sandwich cookies made with ground slivered almonds, confectioners sugar, butter, eggs, and vanilla. These festive cookies are cut into themed shapes with cut-out centers filled with raspberry jam, creating a sandwich effect with a glossy jam peek-through. They are baked until just set, offering a delicate crumb and soft texture that pair well with holiday gatherings.

Description

Christmas Linzer Cookies start with a dough made from finely ground slivered almonds combined with butter, confectioners sugar, eggs, and vanilla, producing a rich and tender base. After chilling the dough to firm it up, the dough is rolled and cut into festive shapes, with some having centers cut out to reveal the raspberry jam filling between cookie layers. The dough is delicate and crumbly, requiring careful handling and chilling before baking.

Versions of this cookie often feature seasonal cutters like snowflakes. Baking involves two trays to accommodate cookies with cutouts which bake faster. The jam adds sweetness and contrast to the buttery almond-flavored cookies. When assembled, these cookies have a charming appearance with the jam visible through the top cookie cutout, making them ideal for holiday sharing.

These cookies maintain freshness when stored properly, and the use of almond flour brings distinctive flavor and texture different from standard sugar cookies.

Ingredients

Servings
  • 2 1/2 cups flour
  • 1 1/2 cups confectioners sugar
  • 1/2 cup butter 1 stick
  • 2 egg
  • 1 teaspoon vanilla
  • 1⁄4 teaspoon salt
  • 2 cups almonds finely ground, slivered
  • 1 cup raspberry jam

Instructions

  1. In a mixing bowl, beat butter and confectioners sugar. Mix in eggs, vanilla, and salt until combined.
  2. Using a blender, finely grind slivered almonds and add to butter mixture.
  3. Add flour and mix until thoroughly combined.
  4. Divide dough into 2 discs and wrap in plastic. Place in refrigerator until firm, approximately 4 hours or overnight.
  5. Roll dough. Using medium size and mini size cookie cutters, snowflakes for example. Cut out 2 medium size snowflake cookies.
  6. Tip: Transfer cutouts to baking sheet before cutting out the center and make sure to dip cutter into flour before pressing into dough.
  7. One cookie will be the base for the linzer sandwich. The other cookie will have the center cutout.
  8. Use one mini cutter, snowflakes for example, and cuttout 1 center. Repeat this, creating sandwich sets with a variety of cookie cutters.
  9. Place the mini cutouts on a separate baking sheet as they will bake faster.
  10. Bake at 350° for 8-10 minutes. Set cookies on a wire rack to cool.
  11. Spread jam on each cookie base.
  12. Set all the top cookies on a sheet and dust evenly with confectioners sugar.
  13. Place tops onto preserve covered bases. These are your linzer sandwich cookies.
  14. Store in a air tight container for up to a week. If they last that long!
