Christmas M&M Cookies
Description
Christmas M&M Cookies combine butter, brown sugar, and granulated sugar creamed until light and fluffy to create a rich base. Eggs and pure vanilla extract are mixed in to bind the dough and add flavor. The incorporation of all-purpose flour, baking soda, salt, and optional cornstarch results in a dough that produces soft, thick cookies. The cornstarch helps in maintaining tenderness and softness.
Folding in 2 to 2.5 cups of plain M&M candies imparts sweet chocolate bursts and a festive appearance. Scooping the dough onto parchment-lined baking sheets with space between each helps the cookies bake evenly. Baking at 385°F for 8-10 minutes yields cookies with lightly golden edges while keeping the centers soft. Adding extra M&Ms on top right out of the oven enhances their visual appeal.
This recipe balances chewiness from brown sugar and softness from cornstarch with the chocolate crunch of M&M's, making it suitable for holiday treat trays and gifting. Using pure vanilla extract and optionally adjusting the salt depending on butter type ensures refined flavor. Handling the dough gently once dry ingredients are added prevents toughness.
Ingredients
- 1 cup butter (barely softened)
- 1 cup brown sugar
- 2/3 cup sugar
- 2 large egg
- 1 teaspoon vanilla extract pure
- 2 3/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon cornstarch (optional - makes soft, thick cookies)
- 3/4 teaspoon salt
- 2 to 2 1/2 cups M&M chocolate candies (plain)
Instructions
- Preheat oven to 385 degrees. In a large bowl, cream together butter, brown sugar, and sugar together for 4 minutes until light and fluffy. Scrape the sides of the bowl with a spatula.
- Add eggs and pure vanilla extract and mix for 1 minute longer.
- Fold in flour, cornstarch, baking soda, and salt. Be careful not to overmix once you add the dry ingredients as it can create too much gluten in the dough and will result in a tougher cookie. Fold in chocolate M & M candies.
- Scoop onto parchment paper lined, light-colored baking sheet. Space the cookies at least 2-inches apart. Bake for 8-10 minutes or just until a light golden color. You don't want to overbake as the cookies will continue to bake on the cookie sheet once it is removed from the oven. It is better to underbake than overbake!
- To make the M & M cookies look extra gourmet, add a few M&M's on the top of the cookies once you pull them from the oven.
Notes
- You can use either salted or unsalted butter; reduce added salt by 1/4 teaspoon if using salted butter.
- Brown sugar contributes to a chewy center, while granulated sugar helps create crisp edges.
- Pure vanilla extract offers authentic flavor; avoid imitation extracts if possible.
- Adding cornstarch is optional but enhances softness and thickness.
- For a festive look, place extra M&M candies on top of cookies just after baking.
