Description
After creaming butter and sugars, peanut butter and egg are mixed in before folding in dry ingredients including rolled oats for chewiness and a mild nutty flavor. Chocolate chips and most of the M&M's are stirred into the dough, with some reserved for topping after baking. Chilling the dough tightens its structure, which translates to thick, soft cookies with a tender crumb.
Baked at 365°F for around 9-10 minutes, the cookies hold their shape and have a slightly crisp edge with a chewy center. Pressing the remaining M&M's onto the warm cookies adds festive color and texture. These cookies can be frozen and stored, making them convenient for holiday treats.

Ingredients
- 1/2 cup butter softened, unsalted
- 1/2 cup brown sugar
- 1/2 cup sugar
- 1/2 cup peanut butter like Skippy's or Jif, creamy
- 1 large egg
- 2 teaspoons vanilla extract
- 3/4 cup rolled oats
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup M&M's red and green holiday
- 3/4 cup chocolate chips
Instructions
- In a large mixing bowl, cream together butter, brown sugar, and sugar for 4 minutes or until light and fluffy.
- Add peanut butter, egg, and vanilla and beat for 1 minute longer.
- Fold in oats, flour, baking soda, and salt. Stir just until combined. Fold in chocolate chips and 3/4 cup of M&M's, reserving 1/4 cup for after baking.
- Tightly wrap the dough and chill for 30 minutes.Once the dough has chilled, preheat oven to 365 degrees.
- Scoop the dough onto a light colored baking sheet, spacing at least two inches apart.Bake for 9-10 minutes.
- Remove from the oven and immediately lightly press the remaining 1/4 cup of M&M's into the tops of the cookies. Let cool for 5-10 minutes before removing.
Notes
- Quick oats can substitute rolled oats without affecting texture.
- Semi-sweet or milk chocolate chips can replace the ones called for.
- Store cooled cookies in an airtight container at room temperature up to 3 days.
- Cookies freeze well in a gallon-sized Ziploc bag for up to two months.
