Description

This recipe transforms classic sugar cookie flavors into a bar form by creaming softened butter and sugar, then mixing in eggs, vanilla, and almond extracts. Dry ingredients including flour, baking powder, baking soda, and salt are folded in, followed by half the Christmas sprinkles incorporated into the dough. The batter is spread evenly in a parchment-lined 9x13 inch pan and baked until edges turn golden.

Once cooled, the bars are removed from the pan and frosted with a vanilla buttercream made from butter, vanilla extract, salt, and powdered sugar. Remaining sprinkles are scattered on top for decoration. The bars are cut into squares, offering a soft, chewy texture with festive appearance and taste.

These bars should be completely cooled before frosting to prevent melting. For storage, keep them in an airtight container at room temperature for up to five days.   • ½ cup butter softened, unsalted

  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 4 TBS Sprinkles any kind, divided, Christmas

Frosting

  • ½ cup butter softened, unsalted
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 ½ cups powdered sugar

Instructions

Cookie Bars

  1. Preheat your oven to 350°F and lining a 9″ x 13″ baking pan with parchment paper.
  2. Cream together the butter and sugar together until light and fluffy.
  3. Then add in your egg, egg yolk, vanilla, and almond extract and mix in all ingredients are well incorporated.
  4. Next, slowly add in all of your dry ingredients – flour, baking powder, baking soda, and salt. Mix until a soft dough forms.
  5. Once dough forms, add half Christmas sprinkles and stir in until evenly distributed throughout dough.
  6. Place dough into the prepared baking dish and spread down gently with a spatula to create an even layer in the bake. Bake the sugar cookie bars for 20-25 minutes or until the edges begin to turn golden brown. 
  7. Remove from oven and let cool completely.
  8. After bars are completely cooled, lift them out of the pan using the parchment paper. Then use a rubber spatula to frost the sugar cookie bars.
  9. Decorate with the rest of the sprinkles.
  10. Cut into squares and serve.

  1. Combine the butter, vanilla extract, salt, and powdered sugar in a bowl and beat until smooth and creamy.
