Chuối chien are mini-bananas, dipped in a batter of rice flour before being fried, that are typical of Vietnamese cuisine.

Ingredients
- 10 mini bananas
- vegetable oil (for frying)
For the batter
- ¾ cup rice flour
- ½ cup all-purpose flour
- ½ teaspoon baking powder
- 2 drops Yellow food coloring
- Juice of half a lime
- ¼ teaspoon salt
- 2 tablespoons caster sugar
- 1 cup water

Instructions
Batter
- In a bowl, whisk all the ingredients except the bananas and vegetable oil until smooth. Let the batter rest for 15 minutes.
Bananas
- Peel the bananas.
- Place the banana between two sheets of plastic wrap or between two sheets of parchment paper. Using a wooden or glass board, gently flatten each banana to a thickness of about ¼ inch/5mm (without breaking them).
- Heat a large pot with vegetable oil on medium-high.
- When the oil is hot enough, dip each banana in the batter and fry for 2 minutes on each side.
- Remove the bananas from the oil, drain them. Dip them again in the batter and fry them again for 2 to 3 minutes on each side.
- Place the fried bananas on paper towels and serve hot.
