Churro Rice Krispie Treats Recipe
Description
This recipe begins by carefully browning unsalted butter to develop a nutty aroma and golden color, which adds depth to the flavor of the treats. Marshmallows are melted into the browned butter off the heat to prevent scorching. Half of the Rice Krispies cereal is stirred in, then flaky sea salt is added before incorporating the remaining cereal evenly.
The mixture is pressed into a buttered 9x13 inch baking dish evenly. A cinnamon-sugar mixture made from sugar, cinnamon, and kosher salt is sprinkled generously over the top, enhancing the churro-inspired flavor. The toppings create a sweet and slightly salty contrast to the soft, chewy treat base.

Ingredients
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon kosher salt
- 1 unsalted butter 4 ounce stick; plus extra for the baking dish
- 1 10 ounce marshmallow bag
- sea salt heaping 1/4 teaspoon; flaky
- 6 cups Rice Krispies cereal
Instructions
- Add sugar, cinnamon and kosher salt in a small bowl, stirring to combine. Set aside. Also butter a 9″ x 13″ baking dish and set aside.
- In a large pot, warm butter over medium low heat. The butter will melt, then foam and bubble, then start to brown. You will notice little brown bits forming at the bottom of the pan. Stir frequently during this process and keep your attention on the pot. The butter can go from wonderfully brown to burnt in just a few moments. You will know the butter is done when it gives off a nutty aroma and turns a golden brown.
- Turn off the heat and add the marshmallows, stirring until smooth. Add half of the cereal and stir to incorporate. Sprinkle in the flaky sea salt and remaining cereal and continue stirring until everything is fully mixed together.
- Transfer mixture to the prepared baking dish. Using a silicon spatula (or piece of parchment paper), press mixture into the dish in an even layer. Sprinkle 1/4 cup of the cinnamon-sugar evenly over the treats. Shake the baking dish around so that the cinnamon-sugar gets into all of the nooks and crannies. Save remaining cinnamon-sugar for another batch of treats.
