Cilantro Lime Air Fryer Shrimp Skewers
Description
This recipe involves tossing raw, peeled, and deveined shrimp in a marinade of lemon juice, garlic puree, paprika, cumin, and salt. The citrus provides acidity to brighten the shrimp; the garlic and spices add depth and a mild smoky warmth. After marinating briefly, the shrimp are threaded onto soaked wooden skewers to facilitate even cooking.
The shrimp can be cooked either in an air fryer preheated to 350°F or on a medium-heat grill. Air frying involves turning the skewers halfway through a total cook time of 5-8 minutes, while grilling requires 2-3 minutes per side. Both methods produce shrimp that are opaque and tender with a slightly charred exterior. Fresh chopped cilantro and additional lime slices garnish the skewers, adding fresh herbaceous notes and extra citrus brightness.
This dish pairs well with sides like Mexican rice, sweet potato fries, or cauliflower wings and is a zero-point option for Weight Watchers when prepared without non-compliant additions.
Because air fryer temperatures vary, it is advised to monitor shrimp doneness starting with less cook time to avoid overcooking. The marinade also works well on other proteins. Make sure skewers fit in the air fryer basket for optimal cooking.
