  • 1 1/2 Tbsp. lime juice about 1 lime, fresh
  • 2 tsp. lemon juice fresh
  • 1/2 cup cilantro fresh, finely chopped
  • 1/4 tsp. salt (more to taste)

Optional additions:

  • lime zest 1/2 tsp lime zest, 1/4 tsp garlic powder or 1 clove minced garlic
  • green onion
  • garlic powder
  • corn
  • black beans

Instructions

  1. Rinse and cook rice according to package instructions.*
  2. Meanwhile, finely chop cilantro (large stems removed if desired).
  3. In a medium bowl, add cooked rice, chopped cilantro, lime juice, lemon juice, and salt. Stir to combine.
  4. Add more salt to taste if desired (the flavors taste best when sufficiently salted!) or any optional flavors/additions.
