Cilantro Lime Cauliflower Rice
Description
This recipe uses fresh cauliflower rice cooked gently with olive or avocado oil, diced yellow onions, and minced garlic to build a fragrant base. The cauliflower rice is cooked briefly until warmed through but still retains some bite. Seasoning the mixture with sea salt, black pepper, fresh chopped cilantro, lime juice, and zest adds layers of brightness and herbaceousness.
The resulting dish has a slightly crisp texture from the gently sautéed onions and a refreshing citrus flavor from the lime components. It works well as a side for grilled proteins, Mexican-inspired meals, or as a base for bowls and salads.
The notes provide useful tips for substitution and preparation: using about 4 cups of frozen cauliflower rice if not fresh, or making your own at home. This cauliflower rice is best served immediately but also stores well for 2-3 days in the refrigerator and reheats easily on the stovetop or microwave.
Ingredients
- 1 oz cauliflower rice fresh bagged
- 2 Tablespoons olive oil or avocado oil
- ½ cup yellow onion
- 1 clove garlic minced
- 1 teaspoon salt sea salt
- black pepper to taste
- 3 Tablespoons cilantro chopped, fresh
- 2 Tablespoons lime juice fresh
- 1 teaspoon lime zest or to taste
Instructions
- Add oil to a large skillet and over medium heat. Once hot, add onions and garlic and cook until fragrant, about 5 minutes.
- Add fresh cauliflower rice and cook for 6-7 minutes until warmed.
- Add salt, pepper, chopped cilantro, lime juice and lime zest.
- This rice is best served immediately but can be cooled and stored in the refrigerator for 2-3 days. Reheat any leftovers over the stove top or in the microwave until piping hot.
Notes
- If using frozen cauliflower rice, increase the amount to about 4 cups to match the volume of fresh rice.
- You can make your own cauliflower rice by finely chopping fresh cauliflower florets, which works well if fresh pre-riced cauliflower isn't available.
- Best served fresh but can be refrigerated for 2-3 days and reheated until piping hot.
