Cilantro-Lime Chicken

Ingredients

  • 4 chicken breast 6 ounces each, boneless, skinless
  • lime plus 1 lime cut into wedges for garnish, zest and juice of 1
  • 1 tablespoon olive oil
  • 1/2 cup cilantro divided, fresh
  • 2 cloves garlic minced
  • 1 teaspoon salt sea salt
  • black pepper to taste, freshly ground

Instructions

  1. Cover the chicken breasts with a layer of plastic wrap, then pound the thicker end of the chicken breasts to an even thickness using a meat mallet or rolling pin.
  2. Create the marinade by mixing lime juice, lime zest, olive oil, half of the chopped cilantro, minced garlic, salt, and black pepper in a container or resealable bag.
  3. Coat the chicken breasts on all sides in the marinade. Store in the refrigerator and allow to marinate for at least 1 hour or ideally overnight.
  4. Prepare the grill or grill pan by lightly oiling it and preheating to medium-high heat.
  5. Grill the chicken for approximately 5 minutes on each side, or until it is well-charred and the internal temperature reaches 165°F.
  6. Let the chicken rest on a platter or chopping board for 5 minutes, then squeeze fresh lime juice over it and garnish with the remaining cilantro.
