Cilantro Lime Rice
Description
Cilantro Lime Rice combines long-grain basmati cooked gently in water and olive oil, resulting in light, fluffy grains. After cooking, the rice is fluffed and mixed with freshly squeezed lime juice, lime zest, finely chopped cilantro, crushed garlic, and seasoning with sea salt and black pepper. This balance delivers a fresh and zesty flavor with a subtle hint of garlic. The addition of herbs after cooling prevents the loss of their bright flavor.
The texture is fluffy and slightly aromatic, with a clean lime tang and herbal brightness from cilantro. The olive oil adds a light richness and a moist finish to the rice, avoiding dryness. This rice works well as a side for grilled meats, seafood, or as a base for burrito bowls and salads.
For variation, lime can be substituted with lemon, and herbs like parsley or basil can replace cilantro. To enhance the flavor, add finely chopped jalapenos or chili flakes for some heat, or toss in chopped spinach for a veggie boost. Using herb stems rather than discarding them maximizes flavor.
Adjust water ratios and cooking times if using rice varieties other than basmati. Adding lime zest to cooking water intensifies citrus notes. Allow the rice to cool slightly before adding herbs and lime juice to preserve their fresh flavors.
