Cilantro Lime Rice
Description
This recipe starts by sautéing rinsed long-grain rice in olive oil to lightly toast it and develop a nutty note. Minced garlic is cooked briefly until fragrant before adding broth and salt to cook the rice until tender. Fluffing the cooked rice separates the grains and prevents clumping.
The final step combines chopped cilantro, lime zest, and freshly squeezed lime juice stirred gently into the rice, imparting a fresh herbal brightness paired with citrus tang. This elevates plain rice into a flavorful accompaniment that pairs well with grilled meats, tacos, or beans.
Chicken or vegetable broth can be used as the cooking liquid to add extra flavor. Leftover rice stores well sealed in the refrigerator for up to 5 days, making it convenient for meal prep or reheating.
Ingredients
- 2 tablespoons olive oil (or butter)
- 1 cup long-grain white rice rinsed and drained
- 1 clove garlic minced
- 2 cups broth (or water)
- ½ teaspoon kosher salt plus more to taste
- ¼ cup cilantro chopped
- 1 lime zested and juiced
Instructions
- Heat the oil in a medium saucepan or pot over medium heat. Add the rice and sauté for 1 minute, stirring frequently, until the rice turns from transparent to white in color.
- Add in the garlic and sauté for 30 seconds or until fragrant.
- Pour in the broth and the salt. Bring to a boil, cover, reduce the heat to low, and cook for 15 minutes.
- Remove the pan from the heat and fluff the rice with a fork.
- Gently stir in the cilantro, lime zest, and lime juice. Taste and season with more salt if necessary.
Notes
- Use chicken or vegetable broth to enhance the rice's flavor during cooking.
- Store leftover cilantro lime rice in an airtight container in the refrigerator for up to 5 days.
