Cilantro Lime Rice Recipe

Cilantro Lime Rice Recipe cooks long grain white rice until tender, then mixes it with fresh lime juice and finely chopped cilantro for a fragrant and slightly tangy side dish. Neutral cooking oil helps keep the grains separate and adds subtle richness. The rice is best served fresh and complements many dishes with its bright, herbaceous flavor and fluffy texture.

Description

This recipe boils rice in salted water with added cooking oil until tender, allowing it to rest briefly uncovered for steam evaporation and to prevent sogginess. Once fluffed, the rice is combined with the zest and brightness of lime juice and the fresh, earthy aroma of finely chopped cilantro, creating a refreshing accompaniment to varied meals.

The texture is fluffy without being mushy, with each grain distinct yet tender. The lime and cilantro blend provides a lively contrast to heavier or spiced main dishes, making it suitable for pairing with grilled meats, Mexican cuisine, or simply as a fresh side.

Cilantro lime rice is best enjoyed freshly made but can be prepped a day or two ahead. Store in an airtight container refrigerated and add cilantro just before serving to preserve its freshness. Reheat gently with a bit of oil, stirring often to restore moisture and fluffiness.

Ingredients

Servings
  • 1 cup long grain white rice
  • 1 ¾ cups water
  • 2 tablespoons neutral cooking oil divided, generic cooking oil
  • 1 teaspoon salt plus more to taste
  • 2 tablespoons lime juice from 1 lime
  • ½ cup cilantro finely chopped

Instructions

  1. Add water to a medium-sized pot and bring to a boil. Once boiling add rice, 1 tablespoon of avocado oil, and 1 teaspoon of salt. Bring the ingredients back to a boil and then reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is tender. Allow to sit, uncovered, for 5 minutes.
  2. Fluff rice with a fork and mix in the remaining tablespoon of avocado oil, 2 tablespoons of lime juice, and ½ cup cilantro. Set aside until ready to serve.

Notes

  • Prep the rice up to 1-2 days ahead but add fresh cilantro just before serving for best flavor.
  • Store cooked rice airtight in the fridge for 3-4 days or freeze for up to 3-4 months.
  • Reheat rice in a skillet over medium-low heat with a splash of oil, stirring occasionally to warm thoroughly without drying out.
