  • 1 cup long grain rice jasmine or basmati rice, rinsed and well drained
  • 1 garlic minced, clove
  • 1 ½ cups water filtered
  • ½ tsp salt fine sea salt
  • lime zest of 1
  • 1 Tbsp lime juice plus more to taste
  • ½ cilantro finely chopped (½ cup loosely packed, bunch

Instructions

  1. Melt the oil in a medium saucepan over medium-high heat. Add the uncooked rice and stir to coat it in oil. Continue to stir until the rice starts to turn golden. Add the garlic and stir for another minute, until fragrant.
  2. Add the water and bring it to a simmer. Then, reduce the heat to low, cover, and simmer until all the water is absorbed, about 18 minutes (or according to your rice package instructions). Remove from the heat and let it rest, covered, for another 10 minutes.
  3. Transfer the rice to a serving bowl and toss with fresh cilantro, lime zest, lime juice, salt, and jalapeño (if using). Add more salt and lime juice to taste if desired.
